This week we would like to share another gem of a recipe. I had never tried a whoopie pie until relatively recently and oh my it was delicious. A tasty cakey sandwich, what’s not to like! Whoopie pies can have a number of fillings from mallow to buttercream, anything goes. We love a light silky buttercream for our filling.
These delicious treats are a perfect indulgent snack. They are quick and easy to make and keep well (if they last that long!)
Top tips:
If you don’t have a piping bag, use a tablespoon to scoop a mound of mixture onto your tray. To ensure an even finish to each mound, wet your hand and smooth any spiky bits.
Make sure you space the mixture out evenly on a tray as the mounds will spread out whilst cooking.
Ensure the shells of your whoopie pies are completely cool before filling! We know it can be tempting to rush this stage as you want to sample your baked creation but let’s be honest, nobody wants their buttercream melting out of their whoopie pie.
We use a little coffee to bring out the flavour of the cocoa. If you wish to not use coffee, substitute for water or milk.
If you can’t find buttermilk in the supermarket, you can create your own by using the quantities of 1 cup of full fat milk to one tablespoon of lemon juice or white vinegar. Leave for 5-10 minutes before using.
